Ingredients
1 Tbsp lemon juice
2 Semi-ripe plantain
1 Medium red onion
2 Medium sized tomatoes
1 Tbsp crushed black pepper
1 Tsp sea salt (adjust to your taste)
Method
Cut the plantain, onion, and tomatoes into desired sizes and add them to a salad bowl.
Squeeze fresh lemon juice over the ingredients in the bowl, then season with black pepper and salt according to taste. Use a kitchen tong to mix all the ingredients, ensuring they are well combined.
Allow the salad to marinate for 5-10 minutes in the fridge or a cool place. This will allow the flavours to meld together.
Garnish the salad with fresh coriander (known as cilantro in some regions).
