Ingredients
2 Medium eggs
2 Tsp cinnamon
1 1/2 Tsp nutmeg
1 Tsp ground cloves
1/2 Tsp baking soda
255g Unsalted butter
1/4 Cup almond flakes
2 Cups pumpkin puree
1 1/2 Tsp baking powder
2 1/2 Cups self raising flour
2 1/4 Cups soft brown sugar
Method
Preheat the oven to 180°C/350°F/Gas Mark 4 and position an oven rack in the middle. Grease two loaf pans or line them with parchment paper.
Combine the flour, baking soda, baking powder, cloves, cinnamon, and nutmeg in a medium mixing bowl. Whisk the dry ingredients together until well combined. Set aside.
Mix the butter and sugar using an electric mixer on medium speed until blended. Add the eggs one at a time, beating well after each addition. Scrape down the sides of the bowl with a silicone spatula to ensure everything is properly mixed. Continue mixing until the mixture is light and fluffy. Then, add the pumpkin and mix well.
Reduce the electric mixer speed to low. Gradually add the flour mixture to the wet ingredients and mix until combined. To ensure there are no lumps, you can first pour the flour into the mixture and use the spatula to lightly incorporate it before returning to the electric mixer.
Evenly divide the batter into the prepared loaf pans. Sprinkle almond flakes on top for added texture and visual appeal.
Bake the loaves in the preheated oven for approximately 60 minutes, or until a cake tester or toothpick comes out clean when inserted into the centre.
