Ingredients
1 Tsp dill
1/2 Tsp salt
1 Tbsp mustard
1 Tbsp lemon juice
1/2 medium shallot
165g king prawns (devein)
3 small garlic cloves (crushed)
1/4 Tsp black pepper (optional)
1/4 large scotch bonnet (seeds removed)
5 slices of brioche (pulsed in a food processor)
Method
Devein the prawns and marinate them in lemon juice for about 1 minute. Meanwhile, add bread to a food processor and pulse for about 10 seconds to make breadcrumbs.
Dice the shallot and mince the garlic. In a medium bowl, combine the breadcrumbs, shallot, garlic, and all the other ingredients.
Roughly chop the marinated prawns and add them to the bowl. Mix until fully combined and formed into a ball.
Lightly dust your hands with flour. Divide the mixture into four equal pieces and shape them into patties. Place the patties on a baking sheet. You can cook them immediately or refrigerate them for 30 minutes before frying.
Heat a pan with oil over low to medium heat. Use a kitchen spatula to carefully, place the patties into the pan. Fry the patties for two minutes on each side, until they are golden brown and cooked through.
Prepare your burger bun with your favourite garnish. Place the cooked patties on the bun and assemble your burger.
