Ingredients
1 tbsp olive oil
1 Knorr veg stock
1 1/2 cups of water
3 tbsp tomato paste
1 1/2 tsp brown sugar
3 garlic cloves, minced
400g can plum tomato
Salt and pepper to taste
220g Vivera vegan mince
198g tin sweetcorn (optional)
1 Green sweet pepper (diced)
400g can kidney beans, drained
1 onion, diced (brown, white, yellow)
Chilli Spice Mix
2 Tsp cajun
2 Tsp oregano
2 Tsp onion powder
4 Tsp cumin powder
3 Tsp paprika powder
1 - 2 Tsp cayenne pepper (adjust to taste)
Method
Heat oil in a large skillet over medium-high heat.
Add garlic and onion to the skillet and cook for 1 minute, until onion is translucent.
Add sweet pepper to the skillet and cook for 2 minutes; increase to high heat and add the vegan mince. Cook until its mostly browned.
Add the Chilli Spice Mix to the skillet and continue cooking until the vegan mince is browned all over. Add the remaining ingredients and water to the skillet. Stir well to combine.
Bring the mixture to a simmer over low-medium heat and let it cook for 10-15 minutes, allowing the flavours to meld together.
Just before serving, taste and adjust the seasoning with salt and pepper according to your preference.
Serve the chilli with rice, warm tortillas, or Doritos crisps. Top it off with sour cream, coriander, and lime wedges for added flavour.
