Non-Stick Frying Pan with Cream, Spinach and Seasoning

Serves: 2 | Prep Time: 5 mins | Cook Time: 20 mins | Total Time: 25 mins

Ingredients

  • 2 salmon fillets

  • 200g fresh spinach

  • 2 tbsp olive oil (or 1 tbsp olive oil + 1 tbsp vegan butter)

  • 2 garlic cloves, minced

  • 150ml dairy-free cream (I used oat cream)

  • 1 tsp Dijon mustard (optional)

  • Salt & black pepper, to taste

  • A pinch of nutmeg or chilli flakes (optional)

  • Lemon wedges, to serve

  • Microgreens or edible flowers, to garnish (optional but gorgeous for plating)

METHOD

  1. Prep the Salmon:
    Pat the salmon dry and season both sides with salt and pepper.

  2. Seasoning Tip:
    While simple salt and pepper work beautifully, feel free to season your salmon however you like! Try paprika, garlic granules, dried herbs, or a squeeze of lemon for extra flavour. Make it your own.

  3. Pan-Sear:
    Heat olive oil (or oil + butter) in a non-stick pan over medium-high heat. Place salmon skin-side down and cook for 3–4 minutes. Flip and cook the other side for 2–3 minutes until golden and cooked through. Set aside.

  4. Creamy Spinach:
    In the same pan, add minced garlic and sauté for 30 seconds. Add spinach and cook until wilted (1–2 minutes). Pour in dairy-free cream and Dijon mustard. Season with salt, pepper, and nutmeg or chilli flakes. Simmer for 2–3 minutes until creamy.

  5. Plating:
    Spoon creamy spinach onto the plate, top with salmon, and garnish with lemon wedges and microgreens.

Serve With:

  • This dish is delicious as is, but you can serve it with roasted sweet potatoes, quinoa, or a light green salad if you fancy something extra.
